Citrus Herb Roasted Chicken Thighs

Citrus Herb Roasted Chicken Thighs are as simple to prepare as the Honey Baked Chicken Drumsticks.  As I wrote in that post, I made both of these at the same time, saving on meal prep.  During the summers in the desert Southwest, it is also helpful to minimize use of the oven by doing double-duty when baking or roasting chicken, or anything for that matter!  Plus, the next day meals are already basically prepared.

Citrus Herb Roasted Chicken Thighs

Ingredients:

  • 4 chicken thighs
  • 1/2 lime or lemon
  • About 2 Tbsp. olive oil
  • Generous amount of dried Greek oregano, thyme, and parsley
  • Seal salt, and optional cracked black pepper
  • A couple tiny pinches of cayenne pepper
  1. Preheat oven to 400º.
  2. Place chicken thighs in 8x8 glass baking dish, skin side up.
  3. Squeeze lime or lemon all over chicken.
  4. Drizzle olive oil onto chicken.  It does not have to be saturated with oil, so use up to 2 tablespoons.
  5. Season with sea salt, optional black pepper, then cover the skin pretty well with the dried herbs.  Add a tiny dusting of cayenne pepper.
  6. Place chicken thighs in oven, and roast for 30 minutes, then reduce heat to 375º and roast for another 35-40 minutes.  Insert a meat thermometer to test for doneness.  The internal temperature should be near 160º.  You can also test by cutting into one of the thighs near the fattest part.  Any juices released should be clear, and the meat should be cooked through.  If it is shiny or glossy, or very pink towards the bone, cook another 10 or so minutes.

Citrus Herb Roasted Chicken Thigh Recipe Variations:

Here are a few suggestions you can try to vary this super simple preparation method the next time you bake or roast chicken thighs.

  • Try this with fresh squeezed orange instead of the lime or lemon.  Add a little honey or maple syrup, and either the olive oil, pecan oil, hazelnut oil, or a light sesame oil.
  • "You put the lime in the coconut..."  Try using coconut oil with the lime, and season with a little curry powder.  Or marinate the chicken in lime juice first, then pan-fry in coconut oil, seasoned as desired.  Brown both sides first while cooking uncovered, then cover and turn heat a little lower to cook until juicy, but cooked through.
  • Add some Sriracha sauce to the Roasted Citrus Herb Chicken Thighs to crank up the heat.  Shake the citrus and oil of choice with hot sauce of choice in a big plastic ziplock bag with the chicken.  Let marinate, time permitting, one hour to overnight, then place in an oven and roast as above.
  • Use an apple cider vinegar, or apple juice in lieu of the citrus.
